Muthia is a flavorful Indian dish that captures the essence of traditional home cooking. This family recipe is passed down through generations and remains a cherished part of Indian culinary culture.
In a large mixing bowl, combine chickpea flour, whole wheat flour, grated bottle gourd, cilantro, green chilies, turmeric powder, coriander powder, baking soda, sugar, salt, and yogurt.
Mix the ingredients together, gradually adding a little water as needed to create a soft dough. Avoid making the dough too sticky.
Divide the dough into 2 equal portions and shape each into cylindrical logs (about 1 inch thick).
Prepare a steamer with boiling water. Place the dough logs onto a greased steaming rack, cover, and steam on medium-high heat for about 20–25 minutes, or until a skewer inserted comes out clean.
Remove steamed logs and allow them to cool for 5 minutes, then slice into 1/2-inch thick pieces.
Heat vegetable oil in a large nonstick skillet over medium heat. Add cumin seeds and mustard seeds; once they splutter, add the muthia pieces.
Pan-fry the muthia slices, tossing gently, until both sides are golden and crisp (about 3–4 minutes per side). Serve warm, garnished with fresh cilantro if desired.
