Sem Aloo is a wholesome Indian vegetable dish cooked with traditional spices and fresh ingredients. This healthy vegetarian preparation is a family staple that supports clean eats and balanced nutrition.
Wash green beans, trim the ends, and cut them into 1-inch pieces. Peel and dice the potatoes into medium cubes.
Heat oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds until aromatic.
Add finely chopped onion, sauté on medium until translucent (about 2-3 minutes), then add minced garlic and grated ginger. Stir for 1 minute until fragrant.
Add chopped tomato, salt, turmeric, coriander, and red chili powders. Cook on medium-high, stirring, until the tomato turns soft and oily separates (about 3-4 minutes).
Add potatoes and beans, mix well to coat with spices. Cover and cook on low heat for 15-18 minutes, stirring every 5 minutes; cook until potatoes are fork-tender and beans are soft.
Uncover and sprinkle garam masala. Increase heat to medium-high, sauté gently for 2 minutes to evaporate excess moisture while mixing well.
Taste and adjust salt. Serve hot, garnished with fresh cilantro if desired.
