Crunchy Sichuan spicy peanuts with chili and Sichuan peppercorn are an addictive snack. A protein-rich, family-friendly treat with bold, fresh heat.
Heat a large nonstick skillet over medium heat and add 3 tbsp oil. Once heated, swirl to coat the surface evenly.
Add raw peanuts and stir constantly for 6–8 minutes, lowering the heat if peanuts brown too quickly. The key is even, slow roasting to prevent burning.
Add dried red chilies, Sichuan peppercorns, and green onion segments. Continue to stir-fry for 2–3 minutes until chilies darken and spices sizzle, but do not burn.
Sprinkle salt and sugar evenly, continue to toss for 1 minute to distribute seasoning and help draw out nutty aroma.
Transfer peanuts to a tray lined with paper towel. Cool completely for maximum crunch before serving. Store airtight after fully cooled.
