Italian sausage simmered with colorful bell peppers and onions is a hearty, protein-packed one-pan dinner. Serve on crusty rolls or over rice for a satisfying family meal.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage links and brown on all sides, about 5–7 minutes. Remove sausages and set aside.
Add the remaining tablespoon olive oil to the same skillet. Add sliced onions and all bell peppers. Sauté on medium-high heat until softened and slightly caramelized, about 8 minutes, stirring occasionally.
Add minced garlic to the peppers and onions, cooking for 1 minute until fragrant. Sprinkle in dried oregano, salt, black pepper, and red pepper flakes.
Slice browned sausages into 1-inch pieces and return them to the skillet. Toss everything together well.
Reduce the heat to low, cover, and simmer for 10–12 minutes until sausages are fully cooked and peppers are tender but not mushy. Serve hot in rolls or over rice as desired.
