Sweet, aromatic, and deeply satisfying, Ras Malai is a beloved Indian dessert with centuries of tradition. This family celebration staple adds sweetness to festivals, weddings, and everyday moments of joy.
Heat 5 cups whole milk in a heavy pan over medium flame, stirring occasionally to prevent scorching.
Once the milk comes to a gentle boil, lower heat and slowly add 2 tbsp lemon juice while stirring until curds separate from whey.
Strain the curds through a muslin cloth, rinse with cold water to remove lemon flavor, and gently press out excess moisture.
Knead warm chenna (paneer) with 1.5 tbsp milk powder for 5 minutes until smooth, then divide and roll into 12 equal disks.
In a large pot, dissolve 1 cup sugar in 4 cups water. Bring to a rolling boil, then gently add chenna disks. Cover and simmer for 15 minutes at medium-high heat, ensuring ras malai pieces double in size.
While the disks cook, prepare sweet milk: Bring 2 cups milk to simmer, add remaining 0.5 cup sugar, saffron, cardamom powder, and simmer 10 minutes to slightly thicken.
Remove cooked ras malai balls, gently press out excess syrup, and immerse immediately in cooled sweet milk mixture.
Refrigerate ras malai at least 2 hours to allow flavors to meld before serving.
Garnish each serving with chopped pistachios, almonds, and a drizzle of rose water just before serving.
