Peel and cut the raw green bananas into half-inch cubes. Soak in water with a dash of salt for 5 minutes to prevent discoloration.
Heat oil in a large skillet on medium flame. Add cumin seeds and let them splutter for 15 seconds to release aroma.
Add finely chopped onion and green chili. Sauté for 2-3 minutes until onions turn golden, stirring occasionally.
Mix in chopped tomatoes, turmeric, red chili powder, and coriander powder. Sauté together for 3 minutes till oil begins to separate from the masala.
Add drained banana cubes and salt, mix well, cover, and cook on medium-low heat for 12-15 minutes. Stir every 3–4 minutes to ensure even cooking and moisture retention.
Once the bananas are soft but not mushy, sprinkle garam masala and lemon juice. Gently mix, cook uncovered for 2 more minutes, then turn off the heat.
Let the sabzi rest for 5 minutes before serving to allow flavors to meld.
