Long, uncut longevity noodles symbolize a long life and are a birthday tradition. A family celebration dish with fresh, savory broth and protein toppings.
Heat 1 tablespoon of sesame oil in a large pot over medium-high heat. Add sliced ginger and sauté for 1 minute to release its aroma.
Pour in chicken broth and bring to a gentle boil. Add chicken breast slices, reduce heat to medium, and simmer for 5–6 minutes until just cooked through. Remove and set aside the chicken to prevent overcooking.
Add shiitake mushrooms and bok choy to the simmering broth. Cook for 3–4 minutes until vegetables are just tender.
Meanwhile, in a separate pot, bring water to a boil. Add longevity noodles and cook according to package instructions, stirring occasionally to prevent sticking. Drain carefully, keeping noodles long and intact.
Divide cooked noodles between bowls. Top with chicken, bok choy, and mushrooms. Ladle hot broth over noodles. Drizzle each bowl with a little sesame oil and garnish with scallions and a sprinkle of white pepper.
