Simple, nutritious, and deeply satisfying, Dahi Bhindi is a traditional Indian vegetable dish for the whole family. This healthy vegetarian preparation supports weight loss goals and fits easily into balanced meal plans.
Heat 2 tbsp oil in a large nonstick skillet over medium heat. Add the okra pieces in a single layer and sauté for 10–12 minutes, stirring occasionally until lightly browned and no longer sticky. Remove okra and set aside.
In the same skillet, add the remaining 1 tbsp oil. Add chopped onions and a pinch of salt; cook over medium heat for 5–6 minutes until golden and caramelized.
Add tomatoes, ground cumin, coriander, turmeric, and chili powder. Cook for 5–6 minutes over medium-low heat until tomatoes are soft and masala is fragrant.
In a bowl, whisk yogurt until smooth. Reduce heat to low, add yogurt to the pan in batches, stirring constantly to prevent curdling. Simmer for 2 minutes until well combined.
Return sautéed okra to the skillet, sprinkle with salt and garam masala, and gently fold to coat. Cover and cook on low heat for 5 minutes, just until the okra is tender but not mushy. Garnish with chopped cilantro before serving.
