Peel the ash gourd thoroughly, remove seeds, and cut into 1-inch cubes for even texture.
Dissolve slaked lime in 8 cups of water; soak the ash gourd cubes for 2 hours, then rinse very well under running water to remove all lime residue.
In a heavy-bottomed pan, boil 4 cups of water with the sugar until it becomes a sticky syrup (one string consistency), then add the drained ash gourd pieces.
Cook over medium heat, stirring gently, for 45–60 minutes until the pieces turn translucent and soak up the syrup, adjusting heat as necessary to avoid over-caramelization.
Mix in rose water and cardamom powder, simmer for 5 minutes, then spread the cubes on a wire rack to cool and crystallize slightly before serving.
