Aloo paratha is a stuffed whole wheat flatbread filled with spiced mashed potatoes and pan-fried with butter. This hearty vegetarian breakfast is a family favorite across North India, perfect for fueling busy mornings.
Boil the potatoes until tender, about 15 minutes, then peel and mash them while still warm.
Stir in the salt, cumin seeds, chili powder, garam masala, and chopped cilantro into the mashed potatoes, mixing thoroughly and letting the mixture cool.
In a bowl, combine whole wheat flour and 0.5 tsp salt. Gradually add water, kneading until you have a smooth dough. Let rest, covered, for 15 minutes.
Divide both the dough and the filling into 4 equal portions. Roll a dough ball into a 5-inch disc, place a portion of filling in the center, seal the edges, and gently flatten.
Roll the sealed dough gently into a 7-inch flatbread, using minimal flour to prevent sticking.
Heat a skillet on medium heat. Cook each paratha for 1–2 minutes per side, then spread 0.5 tbsp butter on each side and cook until golden brown and crisp spots appear.
Serve hot with yogurt and pickles, if desired.
