Wash and slice the zucchini into 1/4-inch rounds, pat them dry with paper towels to prevent excess moisture.
Heat olive oil in a large skillet over medium-high heat. Fry zucchini slices in batches, turning occasionally, until golden brown and cooked through, about 2–3 minutes per side.
Transfer the fried zucchini to a plate lined with paper towels to drain excess oil and cool slightly.
