Grilled chicken, fresh mozzarella, tomato, basil — arrange on a plate and you've got an Italian low carb chicken lunch with almost no prep required.
Pat dry the boneless skinless chicken breasts and brush both sides with 1 tbsp olive oil. Season evenly with salt and black pepper.
Preheat a grill or grill pan to medium-high heat. Place the chicken breasts on the heated grill and cook for 5–6 minutes per side, avoiding excessive flipping to retain juiciness.
While the chicken is grilling, slice the tomatoes and fresh mozzarella into 1/4-inch thick rounds. Set aside.
Check the chicken for doneness—the internal temperature should reach 165°F. Allow the chicken to rest for 3–4 minutes after grilling to retain moisture.
Arrange the grilled chicken slices, mozzarella, and tomato slices on a plate, alternating them for color and texture. Drizzle with remaining 1 tbsp olive oil and 1 tbsp balsamic vinegar, then top with fresh basil leaves just before serving.
