Seem Ki Sabzi is a wholesome Indian vegetable dish cooked with traditional spices and fresh ingredients. This healthy vegetarian preparation is a family staple that supports clean eats and balanced nutrition.
Wash and string Indian flat beans, then cut into 1-inch pieces. Dice the onion, tomato, and potato into uniform chunks for even cooking.
Heat vegetable oil in a skillet over medium heat. Add cumin seeds and let them splutter for 20 seconds for aromatic tempering.
Sauté onions with a pinch of salt on medium-high heat until translucent, about 3 minutes, to build a flavorful base.
Add the diced potatoes and cook for 2 minutes, stirring to prevent burning. Stir in turmeric, coriander, and chili powder to ensure spices coat the vegetables.
Add tomatoes and flat beans. Mix well, cover, and reduce heat to low. Cook for 18–20 minutes, stirring occasionally, until beans and potatoes are tender but not mushy.
Uncover, increase heat to medium-high, and cook off excess moisture for 2–3 minutes, stirring gently so the sabzi remains fluffy and separated.
