Heat 1 tablespoon of olive oil in a skillet over medium heat until shimmering.
Add the chopped onion and sauté for 2–3 minutes until translucent but not browned.
Add chaya leaves and cook, stirring frequently, for 5–6 minutes until wilted and tender. Remove cooked chaya and onion to a plate.
Beat eggs with salt and pepper in a bowl. Add remaining oil to the skillet and heat over medium-low.
