A mixed fry of tiny fish and seafood — Italy's seaside family tradition. This high protein mediterranean dish is a fresh, festive treat best enjoyed immediately with lemon.
Pat all fish, squid, and shrimp very dry with paper towels. This prevents splattering and promotes crispness.
In a large bowl, combine all-purpose flour and cornstarch. Toss the seafood and small fish in batches to coat well, shaking off any excess.
Heat neutral oil in a deep, heavy pan to 350°F (180°C). Use a thermometer for precise control.
Fry seafood in small batches, around 2–3 minutes per batch, until just golden and crisp. Do not overcrowd the pan to maintain oil temperature.
Transfer fry to a wire rack or paper-lined plate. Season with sea salt immediately. Serve hot with black pepper and lemon wedges.
