Start your day with Aloo Poha, a traditional Indian breakfast that's light, nutritious, and satisfying. This healthy vegetarian dish is family-friendly and works well for calorie deficit and clean eating goals.
Rinse the poha in a colander under gentle running water until just softened. Let it drain completely to prevent sogginess.
Heat 2 tbsp oil in a large nonstick skillet over medium heat. When hot, add mustard seeds and let them pop for about 30 seconds.
Add chopped onions and sauté until translucent. Stir in diced potatoes and cook, stirring, for 6–8 minutes until potatoes are just tender.
Add green chili, turmeric powder, and peas. Stir well and cook for an additional 2 minutes. Toss in peanuts and sauté to lightly toast.
Gently fold in the drained poha, salt, and sugar. Toss everything thoroughly and cook uncovered on low heat for 3 more minutes, stirring to ensure even heating and avoid sticking.
Turn off the heat. Squeeze in fresh lemon juice and add chopped cilantro. Mix gently and serve the poha warm.
