Heat olive oil in a large pot over medium heat. Add sliced onion, celery, carrot, and a pinch of salt. Sweat the vegetables for 8 minutes, stirring often until onions are translucent but not browned.
Add minced garlic and cook for 1 more minute until fragrant, then stir in diced tomatoes and cook for another 5 minutes, stirring and scraping the bottom.
