Firm pressed tofu is stir-fried with mixed vegetables in a savory sauce. This vegetarian, high protein family dish is healthy, satisfying, and supports clean eats or calorie deficit goals.
Cut the pressed firm tofu into 3/4-inch cubes and pat dry thoroughly with paper towels to remove excess moisture.
Heat 1/2 tablespoon sesame oil in a large nonstick skillet over medium-high heat. Add tofu cubes and cook, turning occasionally, until golden brown on all sides (about 6-8 minutes). Remove tofu to a plate.
In the same skillet, add broccoli, onions, carrots, snap peas, and red bell pepper. Stir-fry on medium-high heat for 4 minutes until vegetables are crisp-tender.
Push the vegetables to the edges and in the center add remaining sesame oil, minced garlic, and ginger. Stir for 30 seconds until fragrant.
Return tofu to the pan. In a small bowl, mix soy sauce, water, cornstarch, and black pepper into a smooth slurry, then pour over the tofu and veggies. Toss for 2-3 minutes over medium heat until sauce thickens and everything is evenly coated.
Serve immediately while hot for best texture.
