Dried fish maw (swim bladder) is reconstituted and simmered in a rich broth with chicken or crab. This protein-rich, collagen-packed family banquet soup is prized for skin health and celebratory dining.
Soak dried fish maw in cool water for 8-12 hours, changing water once or twice, until softened. Drain and slice into bite-sized pieces.
In a large pot over medium heat, add chicken stock, ginger slices, and chicken breast. Simmer gently for 25 minutes until chicken is cooked through, skimming any foam from the surface.
Remove chicken breast, shred with forks, and set aside. Add sliced fish maw, shiitake mushrooms (sliced), and canned sweet corn to the simmering broth. Cook for 20 minutes on a gentle simmer.
Stir in crab meat and return shredded chicken to the pot. Add Shaoxing wine, soy sauce, salt, and white pepper. Mix cornstarch with 3 tbsp water, then stir in to thicken the soup slightly. Simmer for another 5 minutes.
Reduce heat to low. Drizzle in beaten eggs in a slow stream while stirring to create egg ribbons. Finish with sesame oil and scallion slices. Serve hot.
