Elegant steamed scallops on garlic vermicelli are a fresh, high protein seafood dish. A healthy, family dinner with clean, savory flavor.
Soak the dried vermicelli noodles in very hot water for 8–10 minutes until softened, then drain and set aside.
Scrub the scallop shells clean if needed, and gently separate the scallop meat. Pat dry and place each scallop back on its half shell (or small plate if not in shell).
Arrange a nest of softened vermicelli on each scallop shell, then place a scallop on top of each bed.
In a small pan over medium-low heat, gently sauté minced garlic in vegetable oil for about 2 minutes until fragrant but not browned. Remove from heat, stir in soy sauce, sugar, white pepper, and sesame oil.
Spoon the garlic-soy mixture evenly over each scallop. Set up a steamer, bring water to a boil, then reduce to medium-high. Steam scallops over simmering water for 6–8 minutes until just opaque and tender — avoid overcooking.
Remove the steamed scallops, garnish with sliced green onions, and serve immediately for best texture and freshness.
