A coastal twist on pozole featuring shrimp and hominy in a flavorful red chile broth. This high protein, lighter variation brings fresh seafood flavors to a beloved family tradition.
Heat olive oil in a large pot over medium heat. Sauté the diced onion for 3–4 minutes, stirring occasionally, until translucent, then add the minced garlic and cook for 1 minute.
Toast guajillo and ancho chiles in a dry skillet over medium heat for 1–2 minutes per side until fragrant, being careful not to burn them.
Add toasted chiles to a bowl of hot water and soak for 15 minutes. Drain, then blend chiles with 1 cup of broth until smooth. Strain the sauce to remove any solids.
Add the chile sauce, oregano, cumin, paprika, salt, and pepper to the pot. Stir and cook for 2 minutes over medium heat, allowing flavors to bloom.
Pour in the remaining broth and bring to a simmer. Add hominy and cook uncovered for 20 minutes, maintaining a low simmer for flavor development.
Add shrimp to the pot, cover, and cook gently over low heat for 3–4 minutes until shrimp turn pink and are just cooked through. Remove from heat promptly to avoid overcooking.
Ladle pozole into bowls. Serve hot with your favorite toppings like shredded cabbage, radish slices, fresh cilantro, lime wedges, and tortilla chips.
