Warm olive oil in a large soup pot over medium heat. Add diced onion, carrot, and celery, sweating the vegetables gently for 7-8 minutes until softened and fragrant but not colored.
Add minced garlic, rosemary, and thyme to the pot. Sauté for 1 minute, stirring constantly to bloom the aromatics.
Stir in diced potatoes, zucchini, green beans, and savoy cabbage. Cook for 4-5 minutes, stirring occasionally, to begin building depth of flavor.
