Set the Instant Pot in the morning and come back to turkey chili that tastes like it simmered all day. High protein Wednesday lunch, practically hands-free.
Set Instant Pot to sauté mode. Add olive oil, then add diced onion and bell pepper. Sauté for 3–4 minutes until softened, stirring occasionally.
Add ground turkey to the pot. Use a spatula to break up the meat and cook until no longer pink, about 4–5 minutes. Don’t brown too much to retain moisture.
Sprinkle chili powder, cumin, smoked paprika, garlic powder, salt, black pepper, and cayenne over the turkey. Stir well to evenly coat meat and vegetables.
Add canned diced tomatoes (with juice), kidney beans, black beans, and chicken broth. Mix thoroughly, then scrape the bottom to prevent sticking.
Seal the Instant Pot and cook on Manual (High Pressure) for 18 minutes. After the timer finishes, let the pressure release naturally for at least 10 minutes before opening the lid.
Stir chili before serving. If desired, set to sauté for 5 minutes to thicken, stirring often. Taste and adjust seasoning if needed.
