Tender beef and crisp broccoli tossed in a savory soy-ginger sauce make a quick, healthy stir-fry. This high protein family dinner is ready faster than takeout and tastes even better.
Mix beef slices with 1 tablespoon soy sauce and all the cornstarch; set aside for 10 minutes to tenderize.
Heat 1 tablespoon canola oil in a large skillet or wok over medium-high heat. Add broccoli florets and sauté for 2 minutes until bright green. Stir in 2 tablespoons water, cover, and steam for 2 minutes. Transfer broccoli to a plate.
Add remaining canola oil to the pan. Increase to high heat, then add beef in a single layer. Let sear undisturbed for 1 minute, then stir-fry for 1-2 minutes until nearly cooked through. Remove beef onto a plate.
In the same pan, reduce heat to medium. Add ginger and garlic, sauté about 30 seconds until fragrant. Pour in the remaining soy sauce, oyster sauce, sesame oil, and black pepper. Stir until bubbling.
Return broccoli and beef to the pan; toss well in the sauce and stir-fry for another 2 minutes until beef is just cooked and broccoli is crisp-tender. Serve immediately.
