Nalli nihari is a luxurious slow-cooked bone marrow stew from Lucknow, revered for its silky, deeply spiced gravy. Rich in protein and collagen, this carnivore-friendly dish is a treasured family heirloom recipe.
Heat 2 tbsp clarified butter (ghee) in a large heavy-bottomed pot over medium-high heat; sear beef shanks with marrow bone until deep brown on all sides, 8-10 minutes. Remove and set aside.
Add sliced onions to the rendered fat, reduce heat to medium, and sauté until golden and deeply caramelized, about 12-15 minutes—stir frequently to avoid burning.
Stir in ginger and garlic, cooking until aromatic, then add nihari masala, red chili powder, turmeric, and salt. Toast spices for 2 minutes over medium-low heat to release essential oils.
Return beef and bones to the pot. Pour in 6 cups water, cover, and reduce heat to the lowest simmer possible. Cook covered for at least 3.5–4 hours, checking every hour for liquid level.
Mix whole wheat flour with 1/2 cup water to make a slurry. Increase heat to medium, stir in the slurry, and simmer uncovered for 15-20 minutes, allowing the gravy to thicken to a silky consistency.
Skim excess fat if desired, adjust salt to taste, and rest for 10 minutes before serving hot with garnishes of your choice.
