Flambéed mangoes with rum and cinnamon are an elegant Mexican dessert. This family celebration treat is a dramatic, tropical, caramelized confection for special dinners.
Peel the mangoes, slice the flesh away from the pits, and cut into thick wedges for even caramelization.
Melt butter in a large skillet over medium heat, ensuring it's fully melted but not browned.
Add brown sugar, cinnamon, and salt, stirring until bubbling; add the mango wedges, turning gently to coat and cook for 2–3 minutes until the fruit softens and begins to caramelize.
Pour in lime juice and, using a spoon, baste the mangoes for another minute; raise the heat slightly just before flambéing.
Remove the skillet from direct heat, pour in dark rum, and carefully ignite using a long match or lighter; allow the flame to subside naturally, swirling the pan gently to coat the fruit.
Serve immediately: divide mangoes and sauce over scoops of vanilla ice cream for each serving.
