Chinese yam is stir-fried with vibrant goji berries for a dish prized in Traditional Chinese Medicine. This healthy, vegetarian family dish supports clean eats and is naturally low calorie.
Soak the goji berries in warm water for 5 minutes to plump, then drain.
Heat a wok or large skillet over medium-high heat and add the vegetable oil.
Add sliced Chinese yam and carrots; stir-fry for 2–3 minutes, keeping the heat high to maintain crisp texture.
Add snow peas and continue to stir-fry for 1 minute; keep vegetables moving to avoid burning.
Add drained goji berries, light soy sauce, salt, sugar, white pepper, and water. Toss well and stir-fry for another 1–2 minutes until evenly coated and heated through.
Test a piece of yam for doneness—it should be cooked but still slightly firm. Immediately remove from heat, transfer to a serving plate, and serve hot.
