Rinse the split val dal thoroughly and soak in water for 30 minutes to aid even cooking.
In a large saucepan, heat vegetable oil over medium flame. Add chopped onion and sauté for 4-5 minutes until golden and softened.
Add minced ginger and garlic; stir for 1 minute until fragrant but not browned.
Stir in the tomatoes, turmeric powder, cumin, coriander, chili powder, and a pinch of salt. Sauté for 3-4 minutes, allowing tomatoes to break down and spices to bloom.
Drain the soaked dal and add it to the pot. Pour in 3 cups water, bring to a steady boil, then lower heat to a gentle simmer. Cook uncovered for 20-25 minutes, stirring occasionally and skimming any foam, until the dal is tender and thick.
