Tender bok choy is stir-fried with generous minced garlic until just wilted and vibrant green. This healthy, vegetarian side is perfect for a calorie deficit or clean eats plan.
Trim the root ends from the bok choy, separate leaves, and rinse thoroughly to remove grit.
Heat 1 tbsp neutral oil in a large skillet or wok over medium-high heat until shimmering but not smoking.
Add the minced garlic and sauté, stirring constantly, for 30 seconds until fragrant but not browned.
Increase heat to high. Add bok choy, stirring and turning continuously for 2–3 minutes, until leaves are just wilted and stems are crisp-tender.
Drizzle in soy sauce, season with salt and pepper, toss quickly, then immediately remove from heat to prevent overcooking. Serve hot.
