Soft tofu is braised with savory minced pork in a ginger-soy sauce until the flavors meld beautifully. This high protein, family-friendly dish is simple to prepare and perfect over steamed rice.
Cut the soft tofu into 1-inch cubes. Slice green onions thinly for garnish and set aside.
Heat a large skillet or wok over medium-high heat. Add 1 tsp sesame oil, then the ground pork. Stir-fry until pork is mostly cooked and lightly browned, about 3–4 minutes.
Add minced ginger and garlic to the pork and cook for another 1 minute until fragrant, lowering the heat if needed to avoid burning.
Pour in soy sauce, oyster sauce, sugar, and black pepper. Stir well, then add chicken broth. Bring the mixture to a gentle simmer.
Gently add the tofu cubes, being cautious not to break them. Simmer on medium-low heat for 6–8 minutes, allowing the tofu to absorb flavors. Taste and adjust seasoning.
Mix cornstarch with 2 tbsp water to form a slurry. Stir the slurry into the simmering mixture and cook for 1–2 minutes until the sauce thickens and coats the tofu and pork.
Turn off heat. Garnish with sliced green onion and serve immediately over steamed rice.
