Despite its name, this traditional Oaxacan soup features pork ribs, chickpeas, and fresh vegetables in a warming broth. A protein-rich, family-friendly comfort dish perfect for healthy, satisfying meals.
Rinse the pork ribs under cold water and trim off excess fat for a cleaner broth.
In a large pot over medium-high heat, add the ribs, water, onions, garlic, bay leaves, and bring to a boil. Skim off any foam to keep the broth clear.
Reduce heat to low, cover, and simmer gently for 1 hour to allow flavors to develop and ribs to become tender.
Add chickpeas, potatoes, carrots, tomato, zucchini, oregano, black pepper, and salt to the pot. Stir to combine.
Continue simmering on low heat for another 45–60 minutes until all vegetables are very tender and flavors are melded, tasting and adjusting salt as needed before serving.
