Pumpkin seed candy bound with piloncillo is a traditional Mexican sweet. This family-friendly treat is a crunchy, naturally sweet confection with pre-Hispanic roots.
Line an 8x8-inch baking pan with parchment paper or lightly oil it to prepare for the candy.
In a large dry skillet over medium-low heat, toast the pumpkin seeds for 4–5 minutes until they puff slightly and smell toasty. Stir constantly to avoid burning.
In a saucepan, combine piloncillo, water, ground cinnamon, lime juice, and sea salt. Set over medium heat and stir until the piloncillo is completely dissolved.
Increase to medium-high and simmer the syrup, stirring occasionally, until it reaches the hard ball stage (250–266°F/121–130°C), about 8–10 minutes. Reduce heat if it foams too much.
Quickly fold in the toasted pumpkin seeds, stirring vigorously to coat them evenly. Immediately scrape the mixture into the prepared pan, spreading into an even layer using a greased spatula or parchment paper.
Let the candy cool at room temperature for 30–45 minutes until set, then cut into bars or squares before completely hardening.
