First, grab the stems of 9 shiitake mushrooms and remove them.
Wash the inner gill side of the stemmed mushrooms thoroughly under running water.
Blanch the mushrooms in boiling water on high heat for 2 minutes.
Rinse the blanched mushrooms in water two times to cool them down.
Stack 2 shiitake mushrooms, gently squeeze them in your hand to remove excess water.
Slice the drained mushrooms lengthwise into strips about 0.3cm wide.
Sprinkle 1/3T of salt over the sliced mushrooms to season them.
Slice 20g of onion and 5g of green onion into thin strips.
Add 5ml of cooking oil to a pan over medium heat, then add 0.5 tsp of minced garlic and sauté.
Once you smell the garlic, add the onion and saute until it becomes translucent.
Next, add 200g shiitake mushrooms, 5g oyster sauce, 5g allulose, and a pinch of black pepper. Stir-fry for about 5 minutes.
When the mushrooms are almost cooked, add 5g green onion and 10g spicy chili pepper, turn off the heat, then add 5g sesame oil and a sprinkle of sesame seeds.
