Soba noodle recipe – perfect for a refreshing and clean meal when you don’t have much appetite!
Combine 2 tablespoons of tsuyu, 0.5 teaspoon sugar, and 0.5 tablespoon mirin with 200ml of water. Mix well and place in the freezer for 30 minutes to slightly freeze and get a slushy texture.
Grate 50g of radish using a grater, gently squeeze out excess juice, and shape into a round ball. Finely chop scallions.
When water in a pot begins to boil, add 100g of dried soba noodles and stir gently to prevent sticking. Cook for 4–5 minutes.
Immediately transfer the cooked noodles to cold or ice water and vigorously rub with your hands to remove all starch. Squeeze out as much water as possible.
Place the drained soba noodles in a bowl, pour over the chilled broth, and top with grated radish, scallions, seaweed flakes, and wasabi to finish.
