You can swap chicken tenderloin for bacon or other meats. You can also use ketchup and sriracha instead of tomato puree.
Microwave the frozen pumpkin in plastic wrap with holes poked for 4 minutes.
Heat oil in a pan, add chicken tenderloin and finely chopped onion, sauté, then cut up the chicken and season with pepper.
While sautéing, transfer the microwaved pumpkin to the gratin dish and mash it. Add 3T allulose and 2T almond breeze, and mix well.
In the pan, add tomato puree, 0.5T chicken stock, 0.5T minced garlic, 1T allulose, pepper, and chopped king oyster mushrooms. Sauté everything together.
Pour the sautéed mix over the mashed pumpkin in the gratin dish, top with cheese, and air fry at 180°C for 10 minutes.
