You can replace the chicken tenderloin with bacon or other meats. Ketchup and sriracha can be used instead of tomato purée.
Cover frozen sweet pumpkin with plastic wrap, poke a few holes, and microwave for 4 minutes.
Heat oil in a pan, add chicken tenderloin and minced onion, sauté, then cut the chicken into pieces and season with pepper.
While doing step 2, take the microwaved pumpkin and put it in a gratin dish, mash it, add 3T allulose and 2T Almond Breeze, and mix well.
In a pan, cook tomato purée, 0.5T chicken stock, 0.5T minced garlic, 1T allulose, pepper, and sliced mushrooms together.
Pour the sautéed mixture over the mashed pumpkin in the gratin dish, top with cheese, and bake in an air fryer at 180°C for 10 minutes.
