Preheat the oven to 180°C (356°F).
Mix almond flour, baking powder, and salt together in a bowl.
Wash the yuja and finely chop both the peel and pulp.
In another bowl, whisk the eggs, erythritol, and coconut oil until well combined.
Add the yuja and all remaining ingredients to form a dough.
Divide the dough into 6 pieces and shape them into rounds.
Place the shaped dough on a baking sheet lined with parchment paper.
Bake in the oven at 180°C for 18–20 minutes.
Cool on a wire rack.
