Wash the cabbage thoroughly and cut or tear it into bite-sized pieces. Not too thick! Cabbage will shrink when cooked, so it's okay if the pieces are a bit large.
Blanch in boiling water for about 30-40 seconds—don’t overcook or it will become mushy. You can also steam it or microwave (covered with plastic wrap for about 2 minutes). After blanching, rinse with cold water and squeeze out any excess moisture.
To the well-drained cabbage, add salt, perilla oil, and ground sesame seeds, then gently mix by hand or with chopsticks. (Optional) If you like garlic, you can add a very small amount for extra flavor!
It’s best to make just enough for one meal and eat immediately. If you have leftovers, store them in an airtight container in the fridge; it will be fine for about a day.
