Trim the stem from the washed eggplant, cut it lengthwise in half, then cut again into quarters to make bite-sized pieces.
Place the eggplant pieces in a bowl, add 1/4 teaspoon of salt, mix, and let them sit for about 20 minutes to draw out moisture.
Halve the tomatoes and remove the stem.
Slice the tomatoes into bite-sized pieces (it's easier to slice them standing up than laying flat).
Place the tomatoes in a dish, top with garlic, add 1/4 teaspoon of salt, and gently tap the dish to mix (this helps firm up the tomatoes).
Squeeze out excess water from the salted eggplant.
Once the pan is heated, sauté the tomatoes without oil.
When the tomatoes are partially cooked, add the eggplant and stir-fry together.
When the eggplant is lightly cooked, add 5g (one tablespoon) of olive oil.
Stir-fry for 3 minutes with two spoons, and it's done!
