Tastes great with rice, salad, or similar sides.
Before cooking, soak chicken breast in cold water for 10-15 minutes to remove blood, then pat dry with a paper towel. Season lightly with salt and pepper.
Heat 5ml olive oil in a pan over medium heat. Sear chicken breast for 3-4 minutes on each side until golden brown.
Chicken doesn't need to be fully cooked at this stage—once browned on the outside, set aside on a plate.
Add a bit more olive oil to the same pan if desired (optional), then sauté minced garlic and chopped onion.
Once the onion turns translucent, add 50ml of white wine, chicken stock, or water plus 1ml vinegar. Simmer for 1-2 minutes to enhance flavor.
Add sauce and a dash of oregano, then simmer over medium-low heat for 3-5 minutes until thickened.
Return the seared chicken breast to the pan and simmer gently for 10 minutes to allow the sauce to soak in.
Flip the chicken once during cooking so the seasoning spreads evenly.
Turn off the heat and sprinkle with basil or parsley before serving.
