Clean the chicken thoroughly, then soak it in cold water to remove the blood.
Place water and chicken into a pot and boil over medium heat.
Skim off the foam and simmer for 40–50 minutes until well cooked.
Remove the cooked chicken, let it cool, then shred the meat into bite-sized pieces.
Strain the broth through a fine cloth to clarify.
Add the chicken, minced garlic, and green onion to the broth and season to taste.
Simmer over low heat for another 10 minutes to finish.
