Roughly chop the peanuts and set aside.
In a bowl, mix rice flour, baking powder, and salt.
Add the chopped peanuts, erythritol, olive oil, and soy milk, and knead into a dough.
Shape the dough into a baguette form to allow for double baking.
Bake once in the oven at 170°C for 20 minutes.
Take out, cool, and slice thinly.
Bake the sliced dough again at 170°C for an additional 10 minutes.
