Cut the chicken breast into bite-sized pieces.
Slice the onion thinly.
Beat the eggs well and set aside.
Heat olive oil in a pan and stir-fry the chicken breast and onion.
Once the chicken and onion are cooked, add low-sodium soy sauce, cooking wine, and kelp broth. Bring to a boil.
When the flavors have absorbed, pour in the beaten eggs and cook gently over low heat.
Serve the cooked mixture over rice.
