Making curry - a great way to enjoy the full flavor of vegetables with minimal effort, especially on days when you have little appetite!
Add 1 tablespoon of cooking oil and 0.5 tablespoon of butter to a pot heated over medium heat. Once melted, add thinly sliced onions and stir-fry until they turn brown to bring out their full flavor.
When the onions are well sautéd, add the beef and quickly stir-fry over high heat until the color disappears, sealing in the juices.
Add diced potatoes and carrots, then stir-fry together for about 3 minutes on medium heat until the potatoes become slightly translucent on the outside.
Pour in 350ml of water and increase the heat to high. Once it starts boiling, reduce to medium-low and simmer gently for about 10 minutes until the potatoes are completely cooked.
Turn off the heat briefly or lower to very low, then add 1 tablespoon of solid curry paste. Stir well so there are no lumps, then continue stirring for about 3 more minutes until thickened.
