Prepare 100g of raw wrapping kelp (150g after blanching) and 150g of tofu; weigh before blanching or using kitchen towel. Eat about 100g each.
Blanch 100g of wrapping kelp in boiling water for 5 seconds, rinse in cold water, and pat dry with a kitchen towel.
Finely chop 20g each of onion and carrot.
Remove moisture from 150g of tofu using a kitchen towel, then mash it.
Heat a pan with a little oil and stir-fry tofu, chopped vegetables, and minced garlic over medium-low heat to evaporate moisture.
Add 5g soy sauce and season to taste.
Finish by adding 2.5g sesame oil and a sprinkle of sesame seeds.
Lay out blanched kelp sheets and place the stir-fried tofu mixture on top, then roll it up like a wrap.
Let the rolls cool down after making them.
Once completely cooled, store in an airtight container.
