Season with chili oil, doubanjiang (fermented chili bean paste), soy sauce, and sugar.
Pour in water or broth and bring to a boil.
Add the tofu and carefully mix without breaking it.
Adjust the taste with spicy peppers, black pepper, and salt.
Add starch water to thicken the sauce.
Transfer to a bowl and garnish with chopped scallions and a drizzle of sesame oil.
