Microwave the tofu for 1 minute to remove excess moisture.
Crumble the drained tofu finely and squeeze out additional moisture.
Cut 3-4 sheets of seaweed into small pieces and add to tofu.
Mix 1 tablespoon fish sauce and half tablespoon perilla oil into the tofu.
Beat 3 eggs and chop green onions to your taste, add to the eggs (season slightly with salt).
Heat a non-stick frying pan and drizzle olive oil.
Pour the egg mixture onto the pan for the first round of cooking, then add the prepared tofu on top.
When the surface starts to brown, fold or roll in half, then pour more egg mixture for the second round.
Once the second egg layer is cooked, fold or roll again (repeat as needed).
Transfer the layered roll to a plate for serving once the outside and inside are cooked.
Serve with soy sauce or ketchup as desired.
