Crack the eggs into a bowl and whisk them thoroughly.
Cut the pollack roe in half and scrape out the insides.
Add the pollack roe to the beaten eggs and mix well.
Add water, salt, and chopped green onion. Mix evenly.
Pour the egg mixture into an earthenware pot.
Cook slowly over low heat, stirring gently.
When the eggs are softly cooked, turn off the heat and drizzle a bit of sesame oil on top.
