Slice the onion into 0.5cm strips and diagonally slice the green onion and spicy green chili peppers for preparation.
Preheat a pan over medium heat and add the thinly sliced pork belly without any oil. Stir-fry until the surface turns white to render some fat.
Once the pork begins to release oil, add 0.5 tablespoon of sugar first and stir-fry over high heat to give a slight caramelized flavor.
Add gochujang (Korean chili paste), dark soy sauce, Korean chili powder, and minced garlic. Stir and cook over medium-low heat so the seasoning coats the meat evenly.
Add the prepared onion, green onion, and chili peppers. Increase to high heat and stir-fry for 1 minute quickly to keep the vegetables from releasing too much moisture.
Turn off the heat, then add sesame oil and black pepper, tossing to finish with the residual heat.
