Slice the onion into 0.5cm thick strips and chop the green onion; rinse the mung bean sprouts in cold water and drain.
Heat a pan over medium heat, add the beef brisket, and grill on both sides until golden brown and the fat is rendered out.
Once the beef fat is out, add the onion and minced garlic, stir-fry over high heat until the onion turns translucent and aromatic.
Add soy sauce, cooking wine, oligosaccharide, and pepper. When the sauce starts to boil, add the mung bean sprouts and stir-fry for about 1 minute, just enough for them to wilt lightly.
Turn off the heat, mix in sesame oil and green onion with the residual heat, then spoon the mixture over a bowl of rice to finish.
